Description

This vibrant Lemon Blueberry Smoothie is a refreshing and nutritious blend bursting with the bright flavors of fresh lemon juice, juicy blueberries, and creamy banana. Naturally sweetened with fruit and enhanced with a hint of almond extract, this vegan smoothie is perfect for a quick breakfast or a revitalizing snack. Made with just five simple ingredients and dairy-free milk, it’s easy to prepare and wonderfully satisfying.

Ingredients

Fruits

  • 1 cup frozen blueberries (or mixed berries)
  • 1 frozen ripe banana
  • ½ lemon, juiced (about 2 tablespoons fresh lemon juice)
  • Zest from 1 lemon

Flavors & Liquids

  • ⅛ teaspoon almond extract
  • ½ cup dairy free milk of choice, plus more to thin if necessary

Instructions

  1. Prepare Ingredients: Gather all ingredients including frozen blueberries, frozen banana, fresh lemon juice and zest, almond extract, and your choice of dairy-free milk.
  2. Blend the Smoothie: In a large high-powered blender, combine the frozen blueberries, frozen banana, fresh lemon juice, lemon zest, almond extract, and ½ cup of dairy-free milk. Blend on high for 1-2 minutes or until all ingredients are well combined into a smooth, creamy consistency.
  3. Adjust Consistency: Check the thickness of the smoothie and add more dairy-free milk if necessary to achieve your desired consistency. Blend briefly again if milk is added.
  4. Serve and Garnish: Pour the smoothie into a glass. Garnish with additional lemon zest, fresh blueberries, or granola if desired for added texture and flavor.

Notes

  • Use any dairy-free milk such as almond, oat, soy, or coconut milk based on your preference.
  • For extra protein or nutrition, consider adding a scoop of plant-based protein powder or flaxseeds before blending.
  • If fresh lemon juice is not available, bottled lemon juice can be used, but fresh is preferred for brightness.
  • This smoothie can be customized by substituting berries or adding a handful of spinach for extra greens.
  • To keep it vegan and allergen-friendly, avoid adding honey or dairy-based yogurt.
