Ingredients
- Crust:
- 1 ½ cups (168 g) almond flour (or other nut flour/meal)
- ¼ cup (31.25 g) Swerve Confectioners
- ¼ cup (56.75 g) butter, melted
- ¼ tsp salt
- Topping:
- ½ cup (40 g) shredded coconut, unsweetened
- ½ cup (54.5 g) chopped pecans or walnuts
- ⅓ cup (60 g) sugar-free dark chocolate chips
- ¼ cup (42.5 g) keto butterscotch chips
- 1 recipe sugar-free caramel sauce
Instructions
- Prepare Crust: Preheat oven to 325ºF. In a medium bowl, whisk together almond flour, sweetener, and salt. Stir in melted butter until mixture clumps.
- Form the Crust: Press firmly and evenly into a 9×9-inch metal baking pan. Bake 10–12 minutes, until edges begin to brown. Let cool at least 15 minutes.
- Assemble Bars: Sprinkle cooled crust with coconut, nuts, chocolate chips, and butterscotch chips. Drizzle caramel sauce evenly over the top.
- Bake: Increase oven temperature to 350ºF. Bake for 18–20 minutes, until bubbly and golden at the edges.
- Cool: Cool completely before slicing into bars.
Notes
- For a more decadent flavor, you can add a pinch of sea salt on top before baking.
- These bars are best enjoyed after they cool completely to set the caramel sauce.
- Store in an airtight container for up to a week.
