Ingredients
- 1 1/4 cups almond flour
- 1/4 cup cocoa powder
- 1/4 cup powdered sweetener
- 1/4 teaspoon salt
- 1/4 cup butter, melted
- 1 tablespoon water
- 1 cup cold brew coffee
- 1 1/2 teaspoons grass-fed gelatin
- 4 oz cream cheese, softened
- 2/3 cup powdered sweetener
- 3/4 cup heavy whipping cream
- 1/2 teaspoon vanilla extract
Instructions
- In a bowl, whisk together almond flour, cocoa powder, sweetener, and salt.
- Stir in melted butter and water until mixture clumps together.
- Press firmly into the bottom and up the sides of a greased 9-inch pie plate. Crimp edges decoratively. Freeze while preparing filling.
- In a saucepan, pour cold brew coffee and sprinkle gelatin over top. Let bloom 3 minutes.
- Heat gently over medium until just simmering, whisking until gelatin dissolves. Cool to room temperature.
- In a bowl, beat cream cheese with sweetener until smooth. Gradually drizzle in cooled coffee mixture while beating.
- In another bowl, whip heavy cream and vanilla until stiff peaks form. Gently fold into coffee mixture.
- Pour filling into prepared crust. Refrigerate at least 3 hours until set.
Notes
- Use decaf cold brew if avoiding caffeine.
- Top with sugar-free whipped cream or chocolate shavings for extra flair.
- Pie can be made a day ahead for convenience.
