Description

These Jam Donut Cinnamon Rolls are soft, fluffy, and filled with a tangy-sweet raspberry jam that gives a nostalgic jam donut twist to classic cinnamon rolls. They’re completely vegan and topped with an optional vanilla cream cheese frosting for the ultimate indulgent treat.


Ingredients

  • Rolls:
  • 3 ⅓ cups (415g) all-purpose plain flour, plus more for dusting
  • 1 cup (250mL) dairy-free milk, warm
  • ½ cup (115g) vegan butter, room temperature
  • 3 tablespoons (40g) granulated sugar or coconut sugar
  • 1 tablespoon (9g) instant dry yeast
  • 1 teaspoon ground cinnamon
  • Pinch of salt (if not using salted butter)
  • Jam Filling:
  • 1 cup (125g) fresh or frozen raspberries
  • 3 tablespoons (20g) granulated sugar (or to taste)
  • 2 tablespoons cornstarch (corn flour)
  • Frosting (optional):
  • ½ cup (120g) vegan cream cheese, softened
  • ¼ cup (25g) powdered sugar, to taste
  • 1 teaspoon vanilla bean extract or powder

Instructions

  1. Make the Dough: In a large bowl or stand mixer, combine flour, warm milk, vegan butter, sugar, yeast, cinnamon, and salt. Mix until a dough forms. Knead until smooth and stretchy, adding milk or flour as needed for consistency.
  2. Cover with a damp towel and let rise in a warm spot for about 1 hour or until doubled in size.
  3. Prepare the Jam: In a small saucepan, combine raspberries, sugar, cornstarch, and a splash of water. Simmer for 5 minutes while stirring until thick and smooth. Set aside to cool.
  4. Assemble the Rolls: Lightly flour a clean surface and roll out the dough into a large rectangle. Spread the cooled jam over the surface, reaching all edges.
  5. Roll the dough tightly from the long edge to form a log. Cut into 12 even rolls with a sharp knife.
  6. Place rolls on a greased baking tray with space between each. Cover with a towel and let rise again for about 1 hour, until puffy.
  7. Bake: Preheat oven to 180°C (350°F). Bake for 15–20 minutes until lightly golden and cooked through.
  8. Frost: Whisk frosting ingredients together until smooth. Drizzle generously over cooled rolls.
  9. Serve fresh, or store in an airtight container at room temperature for 1–2 days or in the fridge for up to 4 days. Reheat before serving for best texture.

Notes

  • If dough is too soft to roll, chill in the fridge for 10 minutes.
  • Top with extra jam or cinnamon sugar for a donut-like finish: mix 1/4 cup sugar with 1 tablespoon cinnamon and dust over the rolls.
