Ingredients
- For the Chicken Skewers:
- 3 lbs chicken thighs, cut into cubes
- 3 tablespoons Cajun seasoning
- Wooden or metal skewers
- For the Hot Honey Glaze:
- 1/2 cup Frank’s RedHot sauce
- 1 stick (1/2 cup) unsalted butter
- 1/2 cup honey
- For Garnish:
- Fresh chives, chopped
Instructions
- Toss cubed chicken thighs with Cajun seasoning until evenly coated.
- Thread the chicken onto skewers, leaving a little space between each piece for even cooking.
- In a small saucepan, melt butter, then whisk in Frank’s RedHot and honey. Simmer for 2–3 minutes until smooth.
- Preheat grill to medium-high (375–400°F) and lightly oil the grates.
- Grill skewers for 12–15 minutes, turning every 3–4 minutes, until chicken reaches an internal temperature of 165°F.
- Brush with hot honey glaze during the final 3–4 minutes of cooking.
- Let rest for 2–3 minutes, then garnish with chopped chives and serve hot.
Notes
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Adjust the amount of hot sauce for desired spice level.
- Serve with rice, salad, or roasted vegetables for a complete meal.
