- 2 tablespoons apple cider vinegar

- Mix Spices: In a small bowl, combine garlic powder, paprika, kosher salt, chili powder, and onion powder. Set this spice blend aside.
- Prepare Sauce: In a separate bowl or measuring cup, whisk together the honey, apple cider vinegar, minced garlic, and sriracha until well combined.
- Heat Skillet: Place a large 12-inch skillet (preferably cast iron) over medium-high heat to warm up.
- Prepare Salmon: Using a cutting board, carefully peel off the salmon skin using a knife if needed, then discard the skin. Cut the salmon into 1-inch cubes.
- Season Salmon: Place the salmon cubes in a mixing bowl and sprinkle the pre-mixed spices over them. Toss gently to evenly coat all the pieces with the seasoning.
- Cook Salmon: Add the coconut oil to the hot skillet. Arrange the salmon cubes in a single layer so they have space to sear. Cook for 1 minute undisturbed.
- Flip and Glaze: Flip the salmon cubes and pour the honey garlic sauce over them. Continue cooking for another minute, carefully moving the salmon around the skillet to coat evenly in the sauce. Cook for an additional 60 to 90 seconds until the salmon is cooked through and the sauce is glossy.
- Rest and Serve: Remove the skillet from heat and allow the salmon bites to rest for 2 to 3 minutes before serving. This helps the glaze thicken slightly and flavors to meld.
