  • 2 tablespoons oil, divided
  • 2 cups broccoli
  • 1 pound boneless skinless chicken breasts, cut into 1 inch pieces
  • 4 cloves garlic, minced

Sauce Ingredients

  • 1/4 cup low sodium soy sauce
  • 1/4 cup water
  • 1/4 cup honey
  • 1 teaspoon sesame oil
  • 2 teaspoons cornstarch

Seasoning and Garnish

  • Salt and pepper to taste
  • Sesame seeds for garnish, if desired


Instructions

  1. Sauté Broccoli: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the broccoli and cook, stirring occasionally, until tender and caramelized, about 4-5 minutes. Remove broccoli from the skillet and set aside.
  2. Cook Chicken: Add the remaining 1 tablespoon oil to the same skillet. To get crispy, caramelized chicken, cook chicken pieces in two batches. Add chicken to the skillet and cook until browned and cooked through. Add minced garlic during the last minute of cooking and sauté until fragrant.
  3. Prepare Sauce: In a small bowl, whisk together the low sodium soy sauce, water, honey, and sesame oil.
  4. Combine and Thicken: Return the broccoli to the skillet with the cooked chicken. Pour the sauce over the ingredients. In another small bowl, mix the cornstarch with 1 tablespoon cold water until smooth. Slowly whisk the cornstarch mixture into the skillet. Simmer the sauce, stirring occasionally, until thickened, about 1-2 minutes.
  5. Season and Serve: Season the stir fry with salt and pepper to taste. Serve immediately, garnished with sesame seeds if desired.
