Description

A soft, slightly sweet cornbread with a rich honey flavor, perfect as a side dish for any meal.


Ingredients

  • For the Cornbread:
  • 1 tablespoon butter (softened, for greasing)
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • ¼ cup sugar
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 eggs
  • 4 tablespoons butter (melted)
  • ¼ cup honey

Instructions

  1. Prepare the Pan: Preheat the oven to 400°F (200°C). Use the softened butter to grease a 9 or 10-inch square baking pan or a cast-iron skillet.
  2. Mix the Dry Ingredients: In a large bowl, combine the cornmeal, flour, baking powder, sugar, and salt.
  3. Combine the Wet Ingredients: Make a well in the middle of the dry ingredients and add the buttermilk, eggs, melted butter, and honey.
  4. Stir the Batter: Stir until just combined—be careful not to overmix!
  5. Bake: Pour the batter into the prepared pan. Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out with just a few crumbs attached.
  6. Cool and Serve: Let the cornbread cool for at least 10 minutes before cutting it into pieces and serving.

Notes

  • You can bake this cornbread in a cast-iron skillet or a square baking pan, depending on your preference.
  • This recipe also works great for cornbread muffins. If you’d like to make muffins, divide the batter equally into a greased 12-cup muffin tin and bake for 15 minutes.
