Ingredients
Fresh Chilli Sauce
- 80 grams Red chilli pepper (about 2.8 oz or ½ cup) or 2-3 tbsp dried crushed chilli flakes
- 120 ml Distilled white vinegar (about ½ cup)
- 100 grams Sugar (about ½ cup)
- 120 ml Water (about ½ cup)
- 2 tbsp Garlic, minced
- 1 tsp Salt
- 1 tbsp Cornstarch mixed with 2 tbsp water (cornstarch slurry)
Instructions
- Prepare Chilli Mixture: Blend fresh chillies, minced garlic, and water in a food processor until roughly chopped. If using dried chilli flakes, you can skip this step.
- Simmer Ingredients: Transfer the blended chilli mixture to a pot. Add sugar, distilled white vinegar, and salt. Bring to a simmer and cook for 4-5 minutes until the sugar completely dissolves.
- Thicken Sauce: Stir in the cornstarch slurry (cornstarch mixed with water) into the simmering sauce. Continue cooking for a few more minutes until the sauce slightly thickens.
- Cool and Store: Remove the pot from heat and let the sweet chilli sauce cool completely. Transfer it to a clean jar and store in the refrigerator.
Notes
- This recipe yields approximately 300-350 ml of sweet chilli sauce, depending on reduction during simmering.
- Use a jar that holds at least 350 ml if storing for later.
- If using dried chilli flakes, skip blending and combine all ingredients directly in the saucepan.
- The sauce can be stored refrigerated for up to 2 weeks.
