Description

This homemade sweet chilli sauce is a perfect blend of sweetness, tanginess, and mild spiciness, crafted from fresh red chillies, garlic, vinegar, and sugar. Ideal as a versatile dipping sauce for spring rolls, dumplings, fried chicken, and various crispy appetizers, it’s easy to prepare in large batches at home.


Ingredients

Fresh Chilli Sauce

  • 80 grams Red chilli pepper (about 2.8 oz or ½ cup) or 2-3 tbsp dried crushed chilli flakes
  • 120 ml Distilled white vinegar (about ½ cup)
  • 100 grams Sugar (about ½ cup)
  • 120 ml Water (about ½ cup)
  • 2 tbsp Garlic, minced
  • 1 tsp Salt
  • 1 tbsp Cornstarch mixed with 2 tbsp water (cornstarch slurry)


Instructions

  1. Prepare Chilli Mixture: Blend fresh chillies, minced garlic, and water in a food processor until roughly chopped. If using dried chilli flakes, you can skip this step.
  2. Simmer Ingredients: Transfer the blended chilli mixture to a pot. Add sugar, distilled white vinegar, and salt. Bring to a simmer and cook for 4-5 minutes until the sugar completely dissolves.
  3. Thicken Sauce: Stir in the cornstarch slurry (cornstarch mixed with water) into the simmering sauce. Continue cooking for a few more minutes until the sauce slightly thickens.
  4. Cool and Store: Remove the pot from heat and let the sweet chilli sauce cool completely. Transfer it to a clean jar and store in the refrigerator.

Notes

  • This recipe yields approximately 300-350 ml of sweet chilli sauce, depending on reduction during simmering.
  • Use a jar that holds at least 350 ml if storing for later.
  • If using dried chilli flakes, skip blending and combine all ingredients directly in the saucepan.
  • The sauce can be stored refrigerated for up to 2 weeks.
