Ingredients

For the chicken and marinade

  • 4 chicken breasts, cubed
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp red vinegar
  • ½ tsp kosher salt
  • ½ tsp oregano
  • ½ tsp pepper

For the yogurt sauce

  • ¾ cup full-fat unflavored Greek yogurt
  • ¼ cup dill, finely chopped
  • 1 garlic clove, minced
  • 2 tbsp grated cucumber (excess water squeezed out)
  • 1 tbsp lemon juice
  • 1 pinch kosher salt


Instructions

  1. Marinate the chicken: Toss the cubed chicken breasts with olive oil, honey, red vinegar, kosher salt, oregano, and pepper in a bowl. Allow the chicken to marinate while you prepare the other components.
  2. Preheat the grill: Clean and oil your grill grates, then preheat the grill to medium heat, approximately 350°F (175°C), ensuring it’s ready for cooking.
  3. Prepare the yogurt sauce: In a separate bowl, combine Greek yogurt, chopped dill, minced garlic, grated cucumber (with excess water squeezed out), lemon juice, and a pinch of kosher salt. Mix well, cover, and refrigerate until serving.
  4. Assemble the skewers: Thread the marinated chicken pieces evenly onto skewers, ensuring they are not too crowded to cook evenly.
  5. Grill the chicken skewers: Place the skewers directly on the grill grates. Grill each side for 5-6 minutes, turning carefully, until the internal temperature of the chicken reaches 165°F (74°C) and the chicken is cooked through.
  6. Serve: Remove the chicken skewers from the grill and serve hot alongside the chilled yogurt sauce for dipping or drizzling.

Notes

  • To prevent skewers from burning if using wooden skewers, soak them in water for at least 30 minutes prior to threading the chicken.
  • Make sure to squeeze excess water out of the grated cucumber to avoid a watery yogurt sauce.
