Ingredients
For the chicken and marinade
- 4 chicken breasts, cubed
- 3 tbsp olive oil
- 2 tbsp honey
- 2 tbsp red vinegar
- ½ tsp kosher salt
- ½ tsp oregano
- ½ tsp pepper
For the yogurt sauce
- ¾ cup full-fat unflavored Greek yogurt
- ¼ cup dill, finely chopped
- 1 garlic clove, minced
- 2 tbsp grated cucumber (excess water squeezed out)
- 1 tbsp lemon juice
- 1 pinch kosher salt
Instructions
- Marinate the chicken: Toss the cubed chicken breasts with olive oil, honey, red vinegar, kosher salt, oregano, and pepper in a bowl. Allow the chicken to marinate while you prepare the other components.
- Preheat the grill: Clean and oil your grill grates, then preheat the grill to medium heat, approximately 350°F (175°C), ensuring it’s ready for cooking.
- Prepare the yogurt sauce: In a separate bowl, combine Greek yogurt, chopped dill, minced garlic, grated cucumber (with excess water squeezed out), lemon juice, and a pinch of kosher salt. Mix well, cover, and refrigerate until serving.
- Assemble the skewers: Thread the marinated chicken pieces evenly onto skewers, ensuring they are not too crowded to cook evenly.
- Grill the chicken skewers: Place the skewers directly on the grill grates. Grill each side for 5-6 minutes, turning carefully, until the internal temperature of the chicken reaches 165°F (74°C) and the chicken is cooked through.
- Serve: Remove the chicken skewers from the grill and serve hot alongside the chilled yogurt sauce for dipping or drizzling.
Notes
- To prevent skewers from burning if using wooden skewers, soak them in water for at least 30 minutes prior to threading the chicken.
- Make sure to squeeze excess water out of the grated cucumber to avoid a watery yogurt sauce.
- Adjust seasoning of the marinade and yogurt sauce to taste, adding more salt or lemon juice if desired.
- Check chicken internal temperature with a meat thermometer to ensure food safety.
- You can substitute red vinegar with apple cider vinegar or white wine vinegar if preferred.
