Description

These Healthy Oatmeal Strawberry Bars are sweet, crumbly, and filled with a vibrant strawberry layer. They’re made with wholesome ingredients like oats, almond flour, and maple syrup—perfect for breakfast, snacking, or a guilt-free dessert. Vegan, gluten-free, dairy-free, and refined sugar-free.


Ingredients

  • Strawberry Layer:
  • 3 cups fresh strawberries, diced (or thawed frozen strawberries with excess liquid drained)
  • 1/4 cup maple syrup
  • 1 tablespoon lemon juice
  • 12 tablespoons lemon zest
  • Pinch of sea salt
  • 2 tablespoons tapioca starch
  • Oatmeal Layers:
  • 1 1/2 cups rolled oats (gluten-free if needed)
  • 1 1/2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon sea salt
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil (solid at room temperature)
  • 1 teaspoon lemon juice

Instructions

  1. In a small saucepan over medium heat, combine strawberries, maple syrup, lemon juice, lemon zest, and a pinch of sea salt. Simmer for 5–10 minutes until strawberries release juices.
  2. Stir in tapioca starch and simmer for 1 more minute to thicken. Remove from heat and set aside.
  3. Preheat oven to 375°F (190°C) and line an 8×8-inch baking dish with parchment paper.
  4. In a large mixing bowl, combine oats, almond flour, baking soda, and salt. Add maple syrup, coconut oil, and lemon juice. Mix until crumbly dough forms (use hands or a spoon to break up clumps).
  5. Set aside 1/2 to 3/4 cup of the oat mixture. Press the remaining dough into the baking dish in an even layer.
  6. Spread the strawberry mixture evenly over the base. Sprinkle reserved oat mixture on top.
  7. Bake for 20–25 minutes, until edges are lightly golden.
  8. Let cool completely in the pan before slicing into bars.

Notes

  • For best texture, let the bars cool fully before slicing.
  • Use gluten-free oats to make the recipe gluten-free.
  • Frozen strawberries can be used—just be sure to thaw and drain them first.
  • Store leftovers in the fridge for up to 5 days or freeze for up to 3 months.
