Cookie Dough
- 2 ½ cups almond flour
- ⅓ cup maple syrup
- ½ teaspoon sea salt
- ⅓ cup coconut oil
- ⅓ cup chocolate chips
- ½ cup chopped walnuts or other nuts
Chocolate Layer
- ¾ cup semi-sweet or dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- Make the cookie dough: Place the almond flour, chopped walnuts, chocolate chips, sea salt, maple syrup, and coconut oil into a bowl. Mix until well combined to form the cookie dough base.
- Press into pan: Spread the dough evenly into an 8×8 baking pan, pressing it firmly into the corners until mostly even to form the bar base.
- Melt chocolate: In a small pot over low heat, combine the ¾ cup chocolate chips and 1 tablespoon coconut oil. Stir continuously until the chocolate is fully melted and smooth.
- Spread the chocolate: Using a large spoon or spatula, spread the melted chocolate evenly over the cookie dough layer. Place the pan in the fridge for 30 minutes to set.
- Cut and serve: Once set, remove from the fridge and cut into 16 bars. Keep the bars refrigerated until serving to maintain their shape and freshness.
