Description

Indulge in these healthy, no-bake Cookie Dough Bars made with almond flour, maple syrup, and a rich chocolate layer. Perfect for cookie dough lovers who want a guilt-free treat, these bars combine nutty flavors and a smooth chocolate topping for a delicious dessert or snack.

Ingredients

Cookie Dough

  • 2 ½ cups almond flour
  • ⅓ cup maple syrup
  • ½ teaspoon sea salt
  • ⅓ cup coconut oil
  • ⅓ cup chocolate chips
  • ½ cup chopped walnuts or other nuts

Chocolate Layer

  • ¾ cup semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Make the cookie dough: Place the almond flour, chopped walnuts, chocolate chips, sea salt, maple syrup, and coconut oil into a bowl. Mix until well combined to form the cookie dough base.
  2. Press into pan: Spread the dough evenly into an 8×8 baking pan, pressing it firmly into the corners until mostly even to form the bar base.
  3. Melt chocolate: In a small pot over low heat, combine the ¾ cup chocolate chips and 1 tablespoon coconut oil. Stir continuously until the chocolate is fully melted and smooth.
  4. Spread the chocolate: Using a large spoon or spatula, spread the melted chocolate evenly over the cookie dough layer. Place the pan in the fridge for 30 minutes to set.
  5. Cut and serve: Once set, remove from the fridge and cut into 16 bars. Keep the bars refrigerated until serving to maintain their shape and freshness.

Notes

  • Scroll up to the blog post for step-by-step photos.
  • For a thicker dough base, double the cookie dough portion of the recipe.
  • Use dairy-free chocolate chips to make these bars completely dairy-free.
  • Dark or semi-sweet chocolate chips are recommended for balanced sweetness; milk chocolate will make bars sweeter.
  • Sprinkle with chunky Maldon sea salt for a delicious contrast.
  • For an attractive textured chocolate finish, reserve 2 tablespoons of melted chocolate and drizzle over bars after initial chilling.
