Ingredients

Dry Ingredients

  • 1 cup 1:1 gluten-free flour (148 grams)
  • 2 teaspoons cinnamon

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 medium brown banana (100 grams)
  • 1 large egg
  • 1/4 cup + 2 tablespoons milk
  • 2 tablespoons coconut oil (softened/melted)
  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract

Add-ins

  • 1 heaping cup finely shredded carrots (125 grams)
  • 1/4 cup raisins (40 grams) – optional
  • 1/2 cup walnuts, roughly chopped (45 grams) – optional

Frosting

  • 1/2 batch Greek yogurt frosting


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Grease an 8×8 inch baking pan with ghee, butter, or oil to prevent the batter from sticking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together gluten-free flour, cinnamon, ground ginger, nutmeg, baking soda, baking powder, and salt until well combined.
  3. Mix Wet Ingredients: In a separate medium-large bowl, mash the brown banana until smooth. If your coconut oil is solid, melt it gently. Add the egg, milk, melted coconut oil, maple syrup, and vanilla extract to the mashed banana and mix thoroughly.
  4. Combine Mixtures: Add the dry ingredients to the wet ingredients and mix well until there are no streaks of flour. Fold in the finely shredded carrots, raisins (if using), and chopped walnuts (if using) evenly throughout the batter.
  5. Bake the Bars: Pour the batter into the prepared baking pan, spreading it out evenly. Bake for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the bars to cool completely in the pan.
  6. Prepare Frosting: While the bars are baking, prepare your Greek yogurt frosting. Once made, place it in the refrigerator to chill and thicken until the bars are cooled.
