Description
Delicious and healthy buckeyes made with almond flour, natural peanut butter, and sweetened with maple syrup, coated in rich chocolate. Perfect for a nutritious treat with a balance of protein, healthy fats, and natural sweeteners.
Ingredients
For the Buckeyes
- 1 1/3 cup almond flour
- 1 cup natural peanut butter
- 1/4 tsp salt (only if peanut butter isn’t salted)
- 1/4 cup maple syrup
- 1 tsp vanilla extract
For the Chocolate Coating
- 1 cup chocolate chips
- 1 tsp coconut oil
Instructions
- Prepare the Buckeye Mixture: In a mixing bowl, combine almond flour, natural peanut butter, salt if needed, maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
- Shape into Balls: Roll the mixture into small, evenly sized balls. Place them on a tray and refrigerate for 30 minutes to firm up.
- Melt the Chocolate: In a small microwave-safe bowl, melt the chocolate chips together with coconut oil by heating in 30-second increments, stirring between each until smooth and fully melted.
- Dip the Buckeyes: Using a fork, dip each chilled ball into the melted chocolate, covering about two-thirds of each ball. Lift them out and place back on the tray, allowing excess chocolate to drip off.
- Chill the Buckeyes: Refrigerate the dipped buckeyes for at least 15 minutes to let the chocolate set before serving.
- Storage: Store the buckeyes in the refrigerator to keep them firm and fresh.
Notes
- If your peanut butter is already salted, omit the added salt.
- Use natural peanut butter for the healthiest option without added sugars or hydrogenated oils.
- For vegan chocolate coating, use dairy-free chocolate chips.
- Ensure chocolate is completely melted to get a smooth coating.
- Refrigerate thoroughly to prevent melting, especially if not serving immediately.
