Ingredients
Ground Turkey Mixture
- 1 lb ground turkey
- 1 Tbsp sesame oil (or favorite cooking oil)
- 2-3 garlic cloves, minced
- 2 tsp grated ginger
- ½ tsp smoked paprika
- ½ tsp onion powder
- 3 Tbsp low sodium soy sauce
- 1-2 Tbsp sriracha
- 2-3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (adjust to taste)
- 2 tsp corn starch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½-1 Tbsp sriracha (adjust for spice preference)
- 1 tsp rice vinegar
- 2 tsp honey

Instructions
- Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Taste and adjust the heat or sweetness by adding more sriracha or honey accordingly. Chill the sauce until ready to serve.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add ground turkey, breaking it into smaller pieces as it cooks. Brown the turkey thoroughly, reaching an internal temperature of 165°F.
- Season Turkey Mixture: Reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Let it simmer for 2-3 minutes, stirring occasionally to combine flavors.
- Thicken the Sauce: Sprinkle corn starch evenly over the turkey mixture and stir well to combine. This will thicken the sauce. Optionally, stir in about 2 tablespoons of bang bang sauce into the turkey mixture for extra flavor just before serving.
- Assemble Rice Bowls: In serving bowls, layer rice and your choice of fresh veggies such as shredded carrots, cucumber slices, edamame, pickled onions, avocado, cabbage, green onion, and sesame seeds. Top with the cooked turkey mixture and drizzle generously with the remaining bang bang sauce. Garnish as desired.
