Description

This Ground Beef Rice Skillet is a hearty, one-pan meal perfect for busy weeknights. Made with seasoned ground beef, tender rice, green chiles, tomatoes, and topped with melted cheddar cheese, it’s a comforting and easy dinner the whole family will love.


Ingredients

  • 1 pound ground beef
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (4-ounce) can green chiles
  • 1 (10-ounce) can diced tomatoes, undrained
  • 1 1/2 cups beef stock, low sodium
  • 1 1/4 cups long grain rice
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 cup shredded cheddar cheese
  • Fresh parsley, for garnish

Instructions

  1. Heat a 12-inch skillet over medium-high heat and brown the ground beef. Drain any excess fat.
  2. Add diced onion, minced garlic, salt, and pepper. Cook for another 2 minutes until onions begin to soften.
  3. Stir in green chiles, diced tomatoes (with juices), beef stock, rice, and Worcestershire sauce. Bring to a simmer.
  4. Reduce heat to low, cover the skillet, and cook for 20 minutes or until the rice is tender and the liquid is absorbed.
  5. Turn off the heat, remove the lid, and sprinkle cheddar cheese on top. Cover again and let sit for about 5 minutes until the cheese melts.
  6. Garnish with fresh chopped parsley and serve warm.

Notes

  • Use lean ground beef to minimize excess grease.
  • Jasmine or basmati rice can be substituted, but adjust cooking time if needed.
  • To make it spicier, add red pepper flakes or a dash of hot sauce.
  • Leftovers store well in the refrigerator for up to 3 days.
