Description

Juicy and tender chicken thighs marinated in a sweet and savory soy-lemon marinade, then grilled to perfection. Quick, flavorful, and perfect for any cookout!


Ingredients

  • 1/4 cup olive oil
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 3 tbsp low sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 6 garlic cloves, minced
  • 1/8 tsp red pepper flakes (optional)
  • 6 bone-in, skin-on chicken thighs

Instructions

  1. In a large bowl, mix olive oil, lemon zest, lemon juice, soy sauce, brown sugar, parsley, thyme, salt, pepper, garlic, and red pepper flakes (if using) to make the marinade.
  2. Add chicken thighs and toss to coat evenly. Cover and marinate for 30 minutes at room temperature or up to 24 hours in the fridge.
  3. Preheat grill to medium heat.
  4. Grill chicken thighs, turning every 5 minutes, for 20–25 minutes or until internal temperature reaches 165°F and the skin is nicely charred.
  5. Remove from grill and let rest a few minutes before serving.

Notes

  • Marinate overnight for deeper flavor.
  • For crispier skin, finish over direct heat for the last 2–3 minutes.
  • Pairs well with grilled vegetables or a simple green salad.
  • Can also be baked at 400°F for 35–40 minutes if you don’t have a grill.
