Description

A delicious twist on the classic burrito with seasoned rice, savory ground beef, and a chipotle crema, all wrapped in a flour tortilla and grilled with a crispy cheese crust.


Ingredients

  • Taco Seasoning:
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin powder
  • ½ tsp oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • For the Rice:
  • 1 cup long grain rice
  • 2 cups water (more if needed)
  • 1 (14.5 oz) can fire roasted tomatoes
  • 1 tsp taco seasoning (from above)
  • For the Chipotle Crema:
  • ½ cup sour cream
  • Lime juice (to taste)
  • ½ tbsp honey
  • 3 tbsp chipotle peppers in adobo
  • ¼ cup fresh cilantro
  • For the Ground Beef:
  • 1 tsp oil
  • 1 lb lean ground beef
  • ⅓ cup red onion (diced)
  • For the Burritos:
  • Large burrito-sized flour tortillas
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)

Instructions

  1. Mix the Taco Seasoning: In a small bowl, mix the garlic powder, chili powder, paprika, cumin, oregano, salt, and pepper. Set aside for later use in the rice and ground beef.
  2. Prepare the Rice: Rinse the rice well. In a medium pot, add the rinsed rice, water, fire roasted tomatoes, and 1 tsp of taco seasoning. Stir well and bring to a simmer over medium/low heat. Cover and cook for 18-20 minutes, stirring occasionally. Add extra water if needed to prevent burning.
  3. Make the Chipotle Crema: In a food processor, combine the sour cream, lime juice, honey, chipotle peppers in adobo, and fresh cilantro. Blitz until smooth. Taste and adjust with more honey, lime juice, or cilantro as needed.
  4. Cook the Ground Beef: Heat 1 tsp of oil in a pan over medium heat. Add the ground beef and diced onions, then cook for about 4 minutes. Add the taco seasoning and cook for an additional few minutes until the beef is browned and cooked through.
  5. Assemble the Burritos: Warm the tortillas in a microwave or on a dry skillet until pliable. Add a spoonful of the seasoned rice, followed by the ground beef, and drizzle the chipotle crema over the filling.
  6. Roll the Burritos: Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.
  7. Grill the Burritos in Cheese: Heat a skillet or griddle over medium heat. Sprinkle about ¼ cup of cheese directly onto the heated skillet. Place the burrito seam side down on top of the cheese and cook for about 3-4 minutes per side until the cheese is golden brown and crispy.

Notes

  • For extra flavor, you can add some sautéed bell peppers or jalapeños to the ground beef mixture.
  • If you prefer a spicier crema, you can increase the amount of chipotle peppers in adobo.
  • For a vegetarian version, substitute the ground beef with black beans or tofu.
