Description

Greek Yogurt Brownies offer a healthier twist on traditional brownies, boasting lower fat, calories, and carbs while maintaining a fudgy, delicious texture. These brownies are made in one bowl and feature a subtle vanilla yogurt flavor that you won’t even notice. Perfect for a guilt-free sweet treat!

Ingredients

Main Ingredients

  • 1/2 cup chopped chocolate
  • 1 cup vanilla yogurt (see notes)
  • 1/2 cup sugar of choice (white, brown, sugar-free, etc.)
  • 3/4 cup all-purpose flour (gluten-free if needed)
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 cup milk of choice (unsweetened almond milk recommended)
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 180°C (350°F) and line an 8 x 8-inch baking pan with parchment paper. Set aside to use later.
  2. Melt Chocolate and Mix Wet Ingredients: In a microwave-safe bowl, melt the chopped chocolate by microwaving it. Let it sit for 1 to 2 minutes, then add the vanilla yogurt and sugar. Whisk the mixture until smooth and transfer into a large mixing bowl.
  3. Add Dry Ingredients: Add the all-purpose flour, cocoa powder, and baking soda to the bowl. Mix gently until just combined to avoid overworking the batter.
  4. Incorporate Milk: Pour in the milk and mix well to fully incorporate all ingredients into a uniform batter.
  5. Fold in Chocolate Chips: If using, gently fold in the chocolate chips to distribute them evenly throughout the batter.
  6. Bake: Transfer the batter to the prepared pan and bake for 25-30 minutes or until a skewer inserted in the center comes out just clean.
  7. Cool: Remove the brownies from the oven and let them cool in the pan for 10 minutes. Then carefully transfer to a wire rack to cool completely before cutting and serving.

Notes

  • I used vanilla coconut Greek yogurt, but any non-fat or reduced-fat yogurt works well.
  • TO STORE: Keep brownies at room temperature in a sealed container with a paper towel on top to maintain moisture; they stay fresh for up to 5 days. For longer storage, refrigerate.
  • TO FREEZE: Brownies freeze well for up to 6 months. Thaw overnight in the refrigerator or at room temperature before serving.
