Description

This German Oven Pancake is a fluffy, buttery, and slightly sweet breakfast classic baked to perfection in a cast iron skillet. With a crisp golden edge and a soft, tender center, it’s an easy-to-make recipe perfect for a weekend brunch or cozy morning. The batter is simple, made from basic pantry ingredients like flour, eggs, milk, sugar, and melted butter, baked at a high temperature to achieve its signature puffiness.

Ingredients

Dry Ingredients

  • 1/2 cup all purpose flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt

Wet Ingredients

  • 3 large eggs
  • 1/2 cup milk
  • 3 tablespoons melted butter (divided)

Instructions

  1. Preheat the oven: Preheat your oven to 450 degrees Fahrenheit (232 degrees Celsius) to ensure it’s hot enough to give the pancake a nice rise and crisp edges.
  2. Prepare the batter: In a medium-sized bowl, whisk together the eggs, milk, 2 tablespoons of melted butter, salt, and sugar until well combined. Then, gradually add the flour and stir gently until incorporated, being careful not to overmix to keep the batter light and airy.
  3. Butter the skillet: Add 1 tablespoon of melted butter to the bottom of a 9 or 11-inch cast iron skillet, spreading it evenly to prevent sticking and add rich flavor.
  4. Pour and bake: Pour the pancake batter into the prepared skillet and place it immediately into the preheated oven. Bake for 12 to 18 minutes, or until the edges are golden brown and puffed up, indicating it’s fully cooked.
  5. Serve: Remove the pancake from the oven and top with your choice of toppings such as fresh fruit, syrup, powdered sugar, or jam. Serve immediately while warm for the best taste and texture.

Notes

  • Use a well-seasoned cast iron skillet for best results and even heat distribution.
  • Do not overmix the batter to ensure a light and fluffy texture.
  • Baking times may vary slightly depending on oven calibration and skillet size.
  • Serve immediately after baking as the pancake will deflate as it cools.
  • Optional toppings can include fresh berries, maple syrup, lemon juice with powdered sugar, or whipped cream.
