Description

A flavorful and healthy Garlic Mushrooms Cauliflower Skillet recipe that combines sautéed mushrooms and cauliflower with garlic, fresh herbs, and a touch of butter and olive oil. This easy one-pan dish makes a perfect low-carb side or light main course with crispy browned edges and a savory aroma.

Ingredients

Butter and Oil

  • 4 tablespoons unsalted butter (or ghee)
  • 1 tablespoon olive oil

Vegetables

  • 1/2 onion, chopped
  • 1/2 head cauliflower, cut into florets
  • 1 pound (500 g) mushrooms, cleaned
  • 4 cloves garlic, minced

Flavorings

  • 2 tablespoons low sodium vegetable stock
  • 1 teaspoon fresh thyme leaves, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt and pepper, or to taste

Instructions

  1. Heat the Butter and Oil: Heat the butter and olive oil in a large pan or skillet over medium-high heat until melted and shimmering. This creates the flavorful fat base for sautéing the vegetables.
  2. Sauté the Onion: Add the chopped onion to the pan and cook for about 3 minutes, stirring occasionally, until softened and translucent to bring out its sweetness.
  3. Cook the Mushrooms: Add the cleaned mushrooms and cook for about 4-5 minutes, turning to brown all sides. Allow the mushrooms to render out as much moisture as possible and get nicely browned without burning to avoid sogginess.
  4. Add Cauliflower Florets: Stir in the cauliflower florets, cooking for 8-10 minutes until they develop a golden and crispy texture on the edges. Browning the veggies intensifies their flavor and texture.
  5. Deglaze with Vegetable Stock: Pour in the low sodium vegetable stock and cook for 2 minutes, allowing the liquid to reduce slightly and glaze the vegetables.
  6. Add Herbs and Garlic: Mix in the fresh thyme, one tablespoon of parsley, and minced garlic. Cook for an additional 30 seconds until fragrant and aromatic.
  7. Season and Serve: Season the skillet generously with salt and pepper to taste. Sprinkle the remaining parsley over the top, then serve immediately while warm and flavorful. Enjoy your delicious and healthy garlic mushrooms cauliflower skillet!

Notes

  • You can substitute ghee for butter to make the dish lactose-free.
  • Use low sodium vegetable stock to keep the sodium content low.
  • Ensure mushrooms are well browned to prevent excess moisture making the dish soggy.
  • This skillet is perfect as a side dish or a light vegetarian main course.
  • For extra flavor, consider adding a squeeze of lemon juice before serving.
