- 2 Tablespoons olive oil, divided
- 2 Tablespoons Kerrygold garlic and herb butter sticks (or more, to taste)
Instructions
- Preheat Skillet: Heat a large cast iron skillet over medium heat for a couple of minutes to prepare for cooking.
- Cook Potatoes: Add 1 tablespoon olive oil and 1 tablespoon garlic herb butter to the skillet. Once the butter melts, add the bite-sized Yukon Gold potatoes. Season them with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper. Reduce heat to medium-low, cover with a lid, and cook the potatoes for 10–12 minutes, stirring occasionally to prevent burning and ensure even cooking until fork-tender and golden brown.
- Season Steak: While potatoes cook, season the sirloin steak bites with ½ teaspoon salt, ½ teaspoon pepper, and ½ teaspoon garlic powder, adjusting seasoning to taste.
- Sear Steak: When potatoes are done, push them to one side of the pan or remove to prevent burning. Add remaining 1 tablespoon olive oil and 1 tablespoon garlic herb butter to the empty side, increase heat to medium-high, and add the seasoned steak bites. Sear steak for 3–4 minutes per side until browned and cooked to desired doneness. Cook in batches if necessary to avoid overcrowding.
- Combine and Finish: Once steak is cooked, reduce heat to medium-low. Add extra garlic herb butter to the pan to melt and coat both the steak and potatoes. Toss everything together so both are evenly coated and glossy with the garlic butter sauce.
