Description

These Frozen Protein S’mores combine the nostalgic flavors of classic s’mores with a healthy protein boost, perfect for a guilt-free dessert or snack. Layers of crispy graham crackers, rich melted chocolate, creamy peanut butter, and a fluffy coco whip mixed with protein powder come together and freeze into a delicious, set treat.


Ingredients

Base Layer

  • 28 Graham Crackers

Chocolate Layer

  • 1 Cup Chocolate Chips
  • 1 Teaspoon Coconut Oil

Protein Filling

  • 1 Container Coco Whip (thawed)
  • 1-2 Scoops Protein Powder (vanilla or chocolate recommended)
  • 1/3 Cup Natural Peanut Butter

Finishing

  • 1 Pinch Flaky Sea Salt (optional)


Instructions

  1. Prepare Baking Dish: Line an 8×8 inch square baking dish with parchment paper to prevent sticking and make removing the s’mores easier.
  2. Layer Graham Crackers: Place a single layer of graham crackers evenly on the bottom of the dish, covering as much of the base as possible.
  3. Melt Chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 2-3 increments of 30 seconds, stirring between each, until smooth and fully melted. Alternatively, melt the chocolate using a double boiler on the stove.
  4. Spread First Chocolate Layer: Pour half of the melted chocolate over the graham crackers and spread it evenly across the surface.
  5. Freeze to Set Chocolate: Place the baking dish in the freezer for 10 minutes to allow the chocolate to firm up.
  6. Prepare Protein Filling: In a large bowl, mix the thawed coco whip and protein powder together until smooth, creamy, and free of lumps.
  7. Add Protein Layer: Remove the dish from the freezer and spread the coco whip mixture evenly over the set chocolate layer.
  8. Add Peanut Butter Layer: Evenly spread the natural peanut butter on top of the protein filling layer.
  9. Spread Remaining Chocolate: Pour the remaining melted chocolate over the peanut butter layer, spreading it out evenly. Optionally, sprinkle a pinch of flaky sea salt on top.
  10. Top with Graham Crackers: Arrange the remaining graham crackers on top of the chocolate layer and gently press down to sandwich all the layers together.
  11. Freeze to Set: Return the s’mores to the freezer for at least one hour until the layers have fully set.
  12. Serve: Remove from freezer, slice into squares, and enjoy your frozen protein-packed s’mores!
