Description

This French Onion Chicken Casserole is creamy, cheesy, and topped with crispy French fried onions for the ultimate comfort food. With just 5 minutes of prep and simple ingredients like rotisserie chicken and broccoli, it’s a perfect weeknight dinner solution.

Ingredients

  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 1/2 cups sour cream (not lite)
  • 1 packet dry Lipton Onion Recipe Soup and Dip Mix (or Knorr French Onion Mix)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 cups shredded cooked chicken (rotisserie or leftover)
  • 2 cups broccoli florets (fresh or thawed frozen)
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup crispy French fried onions

Instructions

  1. Preheat oven to 350°F. Spray a 9×13-inch baking dish with cooking spray and set aside.
  2. In a large bowl, mix together cream of chicken soup, sour cream, onion soup mix, garlic powder, salt, and pepper until well combined.
  3. Stir in shredded chicken, broccoli florets, and shredded cheddar cheese until evenly mixed.
  4. Transfer the mixture into the prepared baking dish and smooth the top with a spatula.
  5. Sprinkle the French fried onions evenly over the top.
  6. Cover the casserole tightly with foil and bake for 30 minutes, or until heated through and broccoli is tender to your liking.
  7. Remove the foil and bake uncovered for 5–10 more minutes, or until the top is golden brown.
  8. Let the casserole cool slightly before serving.

Notes

  • Use fresh broccoli for a firmer texture or thawed frozen broccoli for a softer texture.
  • Greek yogurt may be used as a sour cream substitute, though results may vary.
  • Great way to use up leftover chicken or store-bought rotisserie chicken.
  • Leftovers store well in the fridge for up to 4 days.
