Description

This indulgent French onion beef meatloaf features sweet caramelized onions, Gruyere cheese, and bold seasonings for a comforting, flavorful twist on the classic—completely made with beef and keto-friendly.


Ingredients

  • 2 tablespoons butter
  • 1 large white onion, halved lengthwise and thinly sliced
  • Salt, to taste
  • 1 teaspoon fresh thyme leaves
  • 2 pounds ground beef
  • 1/2 cup almond flour
  • 2 teaspoons onion powder
  • 3/4 teaspoon black pepper
  • 1 large egg
  • 4 ounces Gruyere cheese, grated

Instructions

  1. In a large skillet over low heat, melt butter. Add sliced onions, sprinkle with salt, and cook, stirring often, until soft and golden brown (15–20 minutes).
  2. Stir in thyme leaves and cook for 1 minute more. Remove from heat and set aside.
  3. Preheat oven to 350°F (175°C). Line a large rimmed baking sheet with parchment paper.
  4. In a large bowl, mix ground beef, almond flour, onion powder, pepper, and an additional 1/2 teaspoon salt.
  5. Add the egg and half of the caramelized onions. Mix thoroughly by hand.
  6. Shape mixture into a 5×9-inch loaf on the prepared baking sheet.
  7. Bake for 40–50 minutes, or until internal temperature reaches 160°F.
  8. Top the meatloaf with grated Gruyere and the remaining onions. Return to the warm oven for 5 minutes, until cheese is melted.
  9. Let rest briefly before slicing and serving.

  • Use a heavy skillet for even caramelization of the onions.
