This indulgent French onion beef meatloaf features sweet caramelized onions, Gruyere cheese, and bold seasonings for a comforting, flavorful twist on the classic—completely made with beef and keto-friendly.
Ingredients
- 2 tablespoons butter
- 1 large white onion, halved lengthwise and thinly sliced
- Salt, to taste
- 1 teaspoon fresh thyme leaves
- 2 pounds ground beef
- 1/2 cup almond flour
- 2 teaspoons onion powder
- 3/4 teaspoon black pepper
- 1 large egg
- 4 ounces Gruyere cheese, grated
Instructions
- In a large skillet over low heat, melt butter. Add sliced onions, sprinkle with salt, and cook, stirring often, until soft and golden brown (15–20 minutes).
- Stir in thyme leaves and cook for 1 minute more. Remove from heat and set aside.
- Preheat oven to 350°F (175°C). Line a large rimmed baking sheet with parchment paper.
- In a large bowl, mix ground beef, almond flour, onion powder, pepper, and an additional 1/2 teaspoon salt.
- Add the egg and half of the caramelized onions. Mix thoroughly by hand.
- Shape mixture into a 5×9-inch loaf on the prepared baking sheet.
- Bake for 40–50 minutes, or until internal temperature reaches 160°F.
- Top the meatloaf with grated Gruyere and the remaining onions. Return to the warm oven for 5 minutes, until cheese is melted.
- Let rest briefly before slicing and serving.
