This French Carrot Salad with Honey Dijon Dressing is a bright, fresh, and irresistibly tasty side dish. Made with grated carrots, green onion, and a tangy-sweet honey Dijon vinaigrette, it’s a quick and easy salad that’s bursting with flavor.
Ingredients
- 4 medium carrots, peeled
- 2 green onion stems, finely sliced on the diagonal
- 1/4 cup parsley, finely chopped (optional)
- Honey Dijon Dressing:
- 1 1/2 tsp Dijon mustard
- 1 tbsp honey
- 2 tbsp fresh lemon juice
- 4 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Grate the carrots using a standard box grater or the shredder attachment on a food processor. Aim for strands about 4cm (1.5 inches) long.
- Place the grated carrot in a mixing bowl along with the green onion and parsley (if using).
- Add all dressing ingredients to a jar and shake well until combined.
- Pour the dressing over the carrot mixture and toss well to coat evenly.
- Serve immediately or refrigerate for up to a few hours before serving.
Notes
- This salad tastes even better after sitting for 15–30 minutes to let the flavors meld.
- You can add raisins, chopped nuts, or crumbled feta for variation.
- Use maple syrup instead of honey to make it vegan.
- Leftovers keep well in the fridge for up to 2 days.
