Description

These Energy Bites are a quick and versatile no-bake snack packed with wholesome ingredients like oats, peanut butter, and flax seeds. Perfect for a healthy, protein-rich snack on the go, they can be customized with a variety of mix-ins such as chocolate chips, dried fruit, nuts, and seeds. Ready in just 10 minutes, these bite-sized treats are easy to prepare and perfect for storing in the fridge for up to a week.


Ingredients

Base Ingredients

  • 2/3 cup creamy peanut butter
  • 1 cup old fashioned oats
  • 1/2 cup ground flax seeds
  • 2 tbsp honey

Mix-Ins (Choose One Variation)

  • 1/2 cup chocolate chips
  • 2 tbsp cocoa powder
  • 1/4 cup white chocolate chips
  • 1/4 cup dried cranberries
  • 1/2 lemon, zested and juiced
  • 2 tsp poppy seeds
  • 1/4 cup mini M&Ms
  • 1/4 cup mini chocolate chips
  • 1/4 cup peanuts
  • 1/4 cup raisins (reduce oats by 1/4 cup if using)
  • 1/4 cup chopped almonds
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup chocolate chips
  • 1/4 cup sprinkles
  • 2 tbsp vanilla protein powder


Instructions

  1. Combine Base Ingredients: In a large bowl, mix together the creamy peanut butter, old fashioned oats, ground flax seeds, and honey until well combined.
  2. Add Mix-ins: Stir in your choice of mix-ins from the variations to the base mixture, ensuring everything is evenly distributed throughout the batter.
  3. Chill the Mixture: Place the bowl in the refrigerator for 15 to 30 minutes. This step firms up the mixture, making it easier to handle and roll into bites; alternatively, slightly damp hands can also help with rolling.
  4. Form Energy Bites: Using your hands, roll the chilled mixture into 12 evenly sized bite-sized balls.
  5. Store: Place the energy bites in an airtight container and store them in the refrigerator for up to one week to keep them fresh.
