Ingredients
4 large eggs, separated into yolks and whites
Salt and pepper, to taste
Optional: 1 tbsp grated Parmesan or shredded cheddar
Optional: 1 tbsp finely chopped herbs (chives, parsley, or thyme)
Instructions
- Preheat oven to 425 °F (220 °C) and line a baking sheet with parchment or lightly grease it.
- Whisk egg whites with salt and pepper until stiff peaks form. Gently fold in cheese or herbs if using.
- Divide whipped egg whites into two mounds on the sheet, making a small well in each.
- Carefully nest a yolk into each well without breaking.
- Bake for 5–7 minutes, until whites are golden and yolks are just set but still soft.
- Season with extra salt, pepper, or herbs and serve immediately.
