Description

Eggs In Clouds are a whimsical and elegant breakfast featuring whipped egg whites baked into fluffy ‘clouds’ that cradle soft, runny yolks. They’re light, airy, and visually stunning—perfect for a quick gourmet-style start to the day.


Ingredients

4 large eggs, separated into yolks and whites

Salt and pepper, to taste

Optional: 1 tbsp grated Parmesan or shredded cheddar

Optional: 1 tbsp finely chopped herbs (chives, parsley, or thyme)


Instructions

  1. Preheat oven to 425 °F (220 °C) and line a baking sheet with parchment or lightly grease it.
  2. Whisk egg whites with salt and pepper until stiff peaks form. Gently fold in cheese or herbs if using.
  3. Divide whipped egg whites into two mounds on the sheet, making a small well in each.
  4. Carefully nest a yolk into each well without breaking.
  5. Bake for 5–7 minutes, until whites are golden and yolks are just set but still soft.
  6. Season with extra salt, pepper, or herbs and serve immediately.

Notes

Best enjoyed immediately for cloud-like texture—do not store long-term.

Top with sliced avocado or cherry tomatoes for contrast.

Serve on toast, English muffins, or greens for a full meal.

For firmer yolks, bake 1–2 minutes longer.
