Description

This Easy Skillet Taco Gnocchi is a flavorful and quick weeknight dinner that combines tender potato gnocchi with seasoned ground beef, spicy jalapenos, and a zesty tomato sauce. Topped with melted Mexican cheese, this comforting dish is perfect for family meals and can be customized with your favorite toppings like sour cream or cilantro.


Ingredients

Meat & Vegetables

  • 1 lb ground beef or ground turkey
  • 1 jalapeno, diced (optional)

Dry & Canned Goods

  • 1 15 oz. canned tomatoes with green chiles
  • 1 packet taco seasoning
  • Water as called for by taco seasoning packet
  • 1 16 oz. package potato gnocchi

Dairy

  • 1 ½ cups Mexican style shredded cheese, more or less to your liking


Instructions

  1. Cook the Meat and Jalapeno: Heat a skillet over medium heat. Add the ground beef or turkey along with the diced jalapeno if using. Cook thoroughly until the meat is browned. Drain any excess grease from the skillet.
  2. Cook the Gnocchi: Meanwhile, bring a pot of water to a boil. Add the potato gnocchi and cook for 2-3 minutes until they float to the surface, indicating they are done. Optionally, sauté the cooked gnocchi in a little olive oil to add a crispy texture.
  3. Combine Sauce Ingredients: Add the canned tomatoes with green chiles, taco seasoning packet, and the amount of water called for by the taco seasoning instructions to the skillet with the browned meat. Stir to combine.
  4. Simmer the Sauce: Let the mixture cook and simmer for about 2 minutes until the sauce thickens slightly.
  5. Add Gnocchi and Cheese: Stir the cooked gnocchi into the skillet until everything is well combined. Sprinkle the shredded Mexican cheese over the top.
  6. Melt the Cheese: Place the skillet under a broiler until the cheese melts and bubbles to your liking. Alternatively, cover the skillet on the stove until the cheese melts.
  7. Serve: Serve the taco gnocchi hot with optional toppings such as sour cream, hot sauce, cilantro, or salsa for extra flavor.
