  • 12 ounces pasta of choice
  • 1 teaspoon black pepper
  • 1/4 teaspoon salt

Wet Ingredients and Flavorings

  • 1/4 cup butter
  • 1 shallot, minced
  • 1 tablespoon minced garlic
  • 1/4 cup white miso
  • 1 cup parmesan cheese, grated
  • 1 1/4 cups reserved pasta water


Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Be sure to reserve 1 1/4 cups of the pasta cooking water before draining.
  2. Melt Butter: In a sauté pan set over medium heat, add the butter and allow it to melt completely.
  3. Sauté Shallot and Garlic: Add the minced shallot and garlic to the melted butter. Sauté for about 3-5 minutes until the shallots become translucent and fragrant.
  4. Add Miso: Stir in the white miso paste and sauté it with the shallots and garlic for 1 minute to deepen the flavor.
  5. Whisk in Remaining Ingredients: Gradually whisk in the grated parmesan cheese, salt, black pepper, and the reserved pasta water. Continue whisking until the cheese is melted and the sauce is smooth and creamy. If you prefer an ultra-smooth texture, you can carefully transfer the sauce to a blender and blend, but this step is optional.
  6. Combine Sauce with Pasta: Add the cooked pasta directly into the sauce. Toss gently but thoroughly to ensure every strand is evenly coated with the creamy, umami-packed sauce.
  7. Serve: Plate the pasta and, if desired, sprinkle red pepper flakes on top for a touch of heat. Serve immediately and enjoy your flavorful miso pasta!
