These Easy Herby Lemon Chicken Skewers feature juicy, lemon-bright chicken bites marinated with garlic and fresh herbs—grilled or broiled to golden perfection for a quick and flavorful dish.
Ingredients
1½ lb boneless chicken breasts or thighs, cut into bite-sized pieces
Juice and zest of 1 lemon
2–3 cloves garlic, minced
2 tbsp olive oil
2–3 tbsp fresh herbs (parsley, thyme, oregano), finely chopped
Salt and freshly ground black pepper, to taste
Optional: ¼ tsp red pepper flakes or smoked paprika
Instructions
- Whisk together lemon juice, zest, garlic, olive oil, herbs, salt, pepper, and optional spices in a bowl.
- Add chicken pieces and toss to coat evenly. Marinate in the fridge for at least 15–20 minutes (or up to a few hours).
- Thread marinated chicken onto skewers, leaving space between pieces.
- Preheat grill, grill pan, or broiler to medium-high heat.
- Grill or broil skewers for 4–5 minutes per side until golden and cooked through (165 °F internal temp).
- Let rest a few minutes before serving to retain juices.

Use chicken thighs for juicier skewers—especially when grilling at high heat.
Switch up herbs based on season or taste—try basil, rosemary, or cilantro.
Add vegetables like peppers or onions to the skewers for variety.
Soak wooden skewers 20–30 minutes to prevent burning if grilling.
