Dates & Filling

  • 10 medjool dates
  • 4-5 tablespoons creamy peanut butter
  • 1/4 cup peanuts, chopped

Chocolate Coating

  • 1 tablespoon coconut oil
  • Flaky sea salt, optional


Instructions

  1. Prepare the Dates: Use a paring knife to carefully slice each date down the middle without cutting all the way through, creating a pocket for the filling. Remove the pits and discard, then arrange the pitted dates on a lined pan.
  2. Fill with Peanut Butter: Spoon creamy peanut butter into each date using a small spoon, or pipe the peanut butter from a Ziplock bag with the tip cut off. Fill each date about three-quarters full to avoid overstuffing.
