Description
Easy Banana Cobbler is a warm, comforting dessert featuring ripe bananas baked under a golden, biscuit-like topping. Quick to prepare and full of cozy flavor, it’s perfect served with vanilla ice cream or whipped cream for a delicious finish.
Ingredients
4 ripe bananas, sliced
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon (optional)
1/2 cup unsalted butter, melted
1/2 cup milk
1 teaspoon vanilla extract
1/2 cup brown sugar (for topping)
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- Slice bananas and layer them evenly in the bottom of the prepared dish. Sprinkle brown sugar evenly over bananas.
- In a bowl, mix flour, granulated sugar, baking powder, salt, and cinnamon (if using).
- In a separate bowl, whisk together melted butter, milk, and vanilla extract.
- Combine wet and dry ingredients and stir until just mixed. Spoon batter over the banana layer—it’s okay if it doesn’t cover all the bananas.
- Bake for 30-35 minutes, or until the top is golden and a toothpick inserted into the topping comes out clean.
- Let cool slightly. Serve warm with ice cream or whipped cream if desired.
Notes
Add chopped nuts like walnuts or pecans for crunch.
Use browned butter for a richer, nutty flavor.
Stir in shredded coconut or mix in berries for a tropical or fruity twist.
Store leftovers in the fridge for up to 3 days and reheat as needed.
Use gluten-free flour for a gluten-free version.
