Perfect as a light dessert, snack, or breakfast, this deliciously smooth pudding offers a subtly sweet and warm treat that requires minimal prep and just a few hours to set.
Ingredients
Chia Pudding
- 4 cups boiling water
- 3 Earl Grey tea bags (approximately 4 ½ teaspoons loose tea leaves total)
- 1 cup raw cashews, soaked for at least 2 hours
- ⅓ cup maple syrup
- 1 tablespoon vanilla bean paste
- ¼ teaspoon fine sea salt
- ½ cup chia seeds
To Serve
- Sliced strawberries
- Thick vegan vanilla yogurt (optional)
- Shaved dark chocolate (optional)
Instructions
- Steep the Tea: Place the Earl Grey tea bags in a large liquid measuring cup or bowl with a spout. Pour the boiling water over the tea bags and stir gently. Allow the tea to steep for 4 minutes to extract its fragrant flavor.
- Cool the Tea: After steeping, remove the tea bags and let the tea cool down considerably to avoid cooking the cashews later in the blender.
- Prepare Cashew Mixture: Drain and rinse the soaked cashews, then place them in a high-speed blender. Add the maple syrup, vanilla bean paste, and fine sea salt to the blender with the cashews.
- Blend Earl Grey Cashew Milk: Pour the cooled Earl Grey tea into the blender with the cashew mixture. Blend on high speed for about 1 full minute, or until the mixture is completely silky smooth and creamy.
- Combine with Chia Seeds: Place the chia seeds in a large bowl. Pour the Earl Grey cashew milk mixture over the chia seeds and whisk vigorously to combine evenly.
- Refrigerate to Set: Cover the bowl and refrigerate for at least 2 hours, preferably overnight, allowing the chia seeds to absorb the liquid and thicken into a pudding consistency.
- Serve the Pudding: Once set, stir the pudding gently. Serve in small bowls or glasses, topped with dollops of thick vegan vanilla yogurt, sliced strawberries, and shaved dark chocolate if desired.
Notes
- The recipe depends on the strength of your Earl Grey tea bags; if your tea bags are weaker than 1 ½ teaspoons of loose tea per bag, consider using 4 bags instead of 3.
- Soaking cashews for at least 2 hours softens them for a smoother blend, but you may soak longer or overnight if preferred.
- For a creamier texture or sweeter taste, adjust maple syrup quantity to your liking.
- Optional toppings like vegan vanilla yogurt, strawberries, and dark chocolate lend extra flavor and texture.
