Description

This Dorito Casserole is a cheesy, family-friendly Tex-Mex inspired dish layered with seasoned ground beef, salsa, corn, beans, crushed Nacho Cheese Doritos, and melty cheese. It’s baked until golden and topped with fresh veggies for a crunchy, creamy, and flavorful comfort food dinner.


Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, diced
  • 1 packet taco seasoning (or 3 tbsp homemade)
  • 1 1/2 cups thick salsa
  • 1 cup sour cream
  • 1 cup corn
  • 1/2 cup black beans
  • 2 cups shredded cheese
  • 4 cups crushed Nacho Cheese Doritos
  • 1/2 cup tomatoes, diced
  • 1/2 cup black olives, diced
  • 1/4 cup green onions, sliced

Instructions

  1. Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium-high heat, cook the ground beef for 4–5 minutes, breaking it up with a spatula. Drain excess fat.
  3. Add diced onion and cook another 3–4 minutes until softened.
  4. Stir in taco seasoning and cook for 1 minute.
  5. Add salsa, black beans, and corn. Mix well, then remove from heat. Stir in sour cream until combined.
  6. Layer 1/3 of the crushed Doritos in the baking dish, followed by 1/2 of the meat mixture and 1/3 of the cheese.
  7. Repeat with another 1/3 of the Doritos, the remaining meat mixture, and 1/3 of the cheese. Top with the final 1/3 of Doritos and remaining cheese.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake another 15 minutes, or until cheese is melted and bubbly.
  9. Remove from oven and top with diced tomatoes, olives, and green onions. Serve warm with sour cream, salsa, or guacamole.

Notes

  • Use spicy Doritos for extra heat or Cool Ranch for a flavor twist.
  • Can substitute ground turkey or chicken for beef.
  • Make ahead and refrigerate, then bake when ready to serve.
  • Best enjoyed fresh—Doritos will soften after sitting.
