Description
This Dorito Casserole is a cheesy, family-friendly Tex-Mex inspired dish layered with seasoned ground beef, salsa, corn, beans, crushed Nacho Cheese Doritos, and melty cheese. It’s baked until golden and topped with fresh veggies for a crunchy, creamy, and flavorful comfort food dinner.
Ingredients
- 1 pound ground beef
- 1/2 cup onion, diced
- 1 packet taco seasoning (or 3 tbsp homemade)
- 1 1/2 cups thick salsa
- 1 cup sour cream
- 1 cup corn
- 1/2 cup black beans
- 2 cups shredded cheese
- 4 cups crushed Nacho Cheese Doritos
- 1/2 cup tomatoes, diced
- 1/2 cup black olives, diced
- 1/4 cup green onions, sliced
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with cooking spray.
- In a large skillet over medium-high heat, cook the ground beef for 4–5 minutes, breaking it up with a spatula. Drain excess fat.
- Add diced onion and cook another 3–4 minutes until softened.
- Stir in taco seasoning and cook for 1 minute.
- Add salsa, black beans, and corn. Mix well, then remove from heat. Stir in sour cream until combined.
- Layer 1/3 of the crushed Doritos in the baking dish, followed by 1/2 of the meat mixture and 1/3 of the cheese.
- Repeat with another 1/3 of the Doritos, the remaining meat mixture, and 1/3 of the cheese. Top with the final 1/3 of Doritos and remaining cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake another 15 minutes, or until cheese is melted and bubbly.
- Remove from oven and top with diced tomatoes, olives, and green onions. Serve warm with sour cream, salsa, or guacamole.
Notes
- Use spicy Doritos for extra heat or Cool Ranch for a flavor twist.
- Can substitute ground turkey or chicken for beef.
- Make ahead and refrigerate, then bake when ready to serve.
- Best enjoyed fresh—Doritos will soften after sitting.
