These Dark Chocolate and Sea Salt Nut Bars are a deliciously crunchy and sweet snack featuring a mix of toasted nuts and puffed rice bound together with brown rice syrup, enriched with rich dark chocolate and a hint of sea salt. Ingredients
Nut and Rice Mixture
- 3/4 cup cashews, unsalted
- 3/4 cup peanuts, unsalted
- 1 cup almonds, unsalted
- 1/2 cup puffed rice
- 1/4 cup brown rice syrup
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon sea salt
Chocolate Coating
- 1 cup dark chocolate chips
- 2 teaspoons coconut oil
- Optional: flaky salt for topping
Instructions
- Preheat Oven. Set your oven to 325˚F (160˚C) to prepare for toasting the nuts and baking the bars.
- Toast Nuts. Spread the cashews, peanuts, and almonds in a single layer on a rimmed baking sheet. Bake them for 5-8 minutes until they’re fragrant and lightly browned to enhance their flavor.
- Prepare Pan. Line an 8×8-inch baking pan with parchment paper and set it aside for assembling the mixture.
- Combine Nuts and Rice. In a large mixing bowl, add the toasted nuts and puffed rice. Toss everything together until well combined.
- Mix Syrup and Flavorings. Place the brown rice syrup in a microwave-safe bowl and heat it for 30 seconds to loosen the syrup. Whisk in the vanilla extract and sea salt until fully incorporated, then pour this mixture over the nuts and puffed rice. Stir thoroughly until all ingredients are evenly coated.
- Assemble Bars. Transfer the coated nut and rice mixture to the prepared baking pan and press it into an even layer to form the base of the bars.
- Bake Bars. Place the pan in the oven and bake for 18-20 minutes to set the bars. Remove from the oven and allow it to cool for approximately 30 minutes. Then transfer to a cutting board and cut in half lengthwise, then cut each half into 5-6 thin bars. Let bars cool completely before serving.
- Melt Chocolate. Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval until the chocolate is fully melted and smooth.
- Coat and Decorate Bars. Dip the bottom of each cooled bar into the melted chocolate, then place them on a parchment-lined baking sheet. Drizzle additional melted chocolate over the tops of the bars and sprinkle with flaky salt, if desired.
- Set Chocolate. Refrigerate the bars until the chocolate coating has set completely. Once set, the bars are ready to enjoy as a delicious, crunchy, and chocolaty snack.
