Ingredients
1 cup old-fashioned rolled oats
2 cups milk (or dairy-free alternative)
2 large eggs
1 Tbsp butter
2 Tbsp brown sugar (or sweetener of choice)
1 tsp vanilla extract
½ tsp ground cinnamon
Pinch of salt
Optional toppings: fresh fruit, chopped nuts, maple syrup, or extra butter
Instructions
- In a bowl, whisk together eggs, milk, brown sugar, vanilla extract, and salt until smooth.
- In a saucepan over medium heat, melt butter. Add oats and cinnamon; stir to coat for about 1 minute.
- Pour in the custard mixture and bring to a gentle simmer, stirring constantly.
- Reduce heat to low and cook, stirring often, for 5–7 minutes until the oats are tender and mixture thickens.
- Remove from heat and let rest for 1–2 minutes.
- Spoon into bowls and serve with toppings of choice.
