Description
A smooth and flavorful creamy vegan chipotle sauce made from soaked cashews blended with smoky chipotle peppers, garlic, lemon juice, and olive oil. This versatile sauce adds a spicy, tangy kick to any dish and is perfect for dipping, drizzling, or spreading.
Ingredients
Main Ingredients
- ½ cup roasted, unsalted cashews (soaked 8-10 hours)
- 2 chipotle peppers in adobo sauce
- 1 tsp adobo sauce
- ¼ cup water
- ¼ cup lemon juice
- 2 cloves garlic
- 1 tsp kosher salt
- ½ tsp black pepper
- ¼ cup extra virgin olive oil
Instructions
- Soak Cashews: Place the cashews in a bowl and cover them with water. Let them soak overnight or for 8-10 hours to soften and prepare for blending.
- Prepare Ingredients: Drain the soaked cashews thoroughly before transferring them to a blender or food processor along with chipotle peppers, adobo sauce, water, lemon juice, garlic, kosher salt, black pepper, and extra virgin olive oil.
- Blend Until Creamy: Blend all ingredients together until you achieve a smooth, creamy consistency with no lumps remaining.
- Store: Transfer the sauce to an airtight container, cover it, and refrigerate until you’re ready to use it. This will help the flavors meld and improve the texture.
Notes
- For a milder sauce, reduce the number of chipotle peppers or omit the adobo sauce.
- The sauce can be stored in the refrigerator for up to one week.
- Use as a dip, spread, or drizzle over tacos, roasted vegetables, or grilled dishes.
- Soaking cashews is important to achieve a creamy texture without gritty bits.
