Ingredients

Pasta

  • 10 ounces linguini (dry weight, or any pasta)

Shrimp Sauce

  • 1 yellow onion (medium, diced)
  • 2 tablespoons butter (or olive oil)
  • 6 cloves garlic (minced)
  • 1 pound raw jumbo shrimp (prawns, peeled and deveined)
  • 2 teaspoons dried basil
  • 1 teaspoon salt (divided)
  • 3 cups passata (or marinara sauce)
  • 1/2 chicken bullion cube (crushed, or 1 teaspoon stock powder)
  • 2 tablespoons fresh parsley
  • 1 teaspoon ground black pepper (divided)
  • 1 pinch granulated sugar
  • 2/3 cup milk (or half and half or heavy cream)
  • 1 handful parmesan cheese (grated, to serve)
  • 1 pinch fresh parsley (to serve)


Instructions

  1. Cook Pasta: Cook the linguini (or any pasta) al dente according to the package instructions. Once cooked, drain well and set aside while preparing the shrimp sauce.
  2. Sauté Aromatics and Shrimp: Heat butter in a large skillet or pan over medium heat. Add the diced onion and fry until it becomes transparent. Stir in the minced garlic and cook until fragrant, about 30 seconds. Add the shrimp along with dried basil and half a teaspoon of salt. Sauté the shrimp for 2 minutes on one side, then flip and cook for an additional minute on the other side.
  3. Add Sauce Ingredients: Quickly add the passata (or marinara sauce), crushed chicken bullion cube (or stock powder), fresh parsley, half of the ground black pepper, granulated sugar, and the remaining salt. Allow the sauce to heat through for one minute before stirring in the milk or cream. Continue cooking for another minute or until the shrimp is fully cooked and the sauce is creamy and well combined.
  4. Combine Pasta and Sauce: Toss the cooked and drained pasta through the creamy tomato garlic butter shrimp sauce until evenly coated. Adjust seasoning with extra salt if desired.
