Instructions
- Prepare Vegetables: Finely chop the onion, thinly slice the garlic cloves, and peel and cube the potatoes to prepare for sautéing and cooking.
- Sauté Onion and Garlic: Heat olive oil in a pot over medium-high heat. Add the chopped onion and sliced garlic, frying them gently for 5-6 minutes until tender and aromatic.
- Add Potatoes: Toss the cubed potatoes into the pot with the onion and garlic to coat in oil and begin softening.
- Simmer Soup Base: Pour in the vegetable stock and bring the mixture to a boil. Reduce the heat to a simmer and cook until the potatoes are tender, which usually takes about 15 minutes.
- Wilt Spinach: Add the spinach to the pot and cook until it wilts, imparting its flavor and vibrant green color to the soup.
- Blend Soup: Carefully transfer the soup to a blender along with the nutmeg. Blend until the soup is completely smooth and creamy.
- Reheat and Serve: Pour the blended soup back into the pot, gently reheat it until hot, then season with salt and pepper to taste. Serve optionally with a swirl of cream like soya cream for added richness.
