- 1 ½ teaspoons dried oregano
- Salt, to taste
- Black pepper, to taste
- 1–2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 4 tablespoons flour
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 teaspoon paprika
- 1 tablespoon fresh parsley, chopped
Instructions
- Place the chicken in a sealable bag and pound into 4 thin, even pieces. Season both sides with oregano, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the chicken for 4-5 minutes per side until golden and cooked through (165°F). Transfer to a plate and set aside.
- In the same skillet, melt the butter and add the garlic. Cook for 1 minute until fragrant.
- Add flour and cook for 2-3 minutes, stirring constantly, until lightly golden.
- Whisk in chicken broth and heavy cream. Reduce heat to medium and stir until sauce thickens.

- Return chicken and its juices to the skillet. Simmer on medium-low for 2-3 minutes until heated through.
- Garnish with fresh parsley and extra Parmesan. Serve warm.
Notes
- Make sure chicken is evenly pounded for consistent cooking.
- Use freshly grated Parmesan for best flavor and texture.
- Pairs well with pasta, mashed potatoes, or steamed veggies.
- Leftovers can be stored in an airtight container in the fridge for up to 5 days.
