Description

This creamy mushroom soup is a rich and comforting dish featuring sautéed baby bella mushrooms in a luscious buttery broth thickened with flour and blended with heavy cream. Perfect for a cozy meal, it combines savory garlic, earthy thyme, and a hint of soy sauce for depth of flavor.


Ingredients

Mushrooms and Aromatics

  • 1 lb. baby bella mushrooms
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 pinch salt & pepper

Soup Base

  • 4 Tbsp butter
  • 1/4 cup all-purpose flour
  • 3 cups vegetable broth
  • 1 tsp soy sauce
  • 1/8 tsp dried thyme

Finishing

  • 1/2 cup heavy cream


Instructions

  1. Prepare Mushrooms and Garlic: Wash the baby bella mushrooms thoroughly to remove any dirt, then slice them evenly. Mince the garlic cloves finely to release their flavor.
  2. Sauté Mushrooms: Heat olive oil in a soup pot over medium heat. Add the sliced mushrooms along with a pinch of salt and pepper. Cook the mushrooms until they release all their moisture and it evaporates, leaving the mushrooms very dark brown. Add minced garlic and sauté for an additional minute to blend the flavors.
  3. Create Roux: Add butter and flour to the pot with the mushrooms. Stir continuously and cook for about two minutes, allowing the butter to coat the bottom of the pot and the mixture to turn a deep golden brown to form a flavorful roux.
  4. Add Broth and Seasonings: Pour in the vegetable broth, soy sauce, and dried thyme. Stir thoroughly to dissolve the flour from the bottom of the pot. Bring the liquid to a simmer, allowing the soup base to thicken slightly.
  5. Finish with Cream: Stir in the heavy cream to make the soup rich and creamy. Taste and adjust salt and pepper as desired. Serve hot alongside crusty bread for a delightful meal.
