Ingredients

Chicken

  • 2 large chicken breasts
  • Salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • Flour for dredging
  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided

Sauce

  • 1/3 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 cup heavy/whipping cream


Instructions

  1. Prepare the chicken: Slice each large chicken breast in half lengthwise to create 4 smaller cutlets. Season them evenly with garlic powder, salt, and pepper. Lightly coat each piece in flour, shaking off any excess.
  2. Cook the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When hot, add the chicken pieces. Cook for about 4-5 minutes on each side or until golden brown. If the oil splatters excessively, lower the heat slightly. Once cooked, remove chicken from the skillet and set aside.
  3. Make the sauce base: Remove the skillet from heat and add the remaining 2 tablespoons of butter, chicken broth, Dijon mustard, and honey. Stir to combine all ingredients well.
  4. Simmer the sauce: Return the skillet to medium heat. Stir the sauce continuously until the mustard fully dissolves and the sauce starts to reduce without drying up completely.
  5. Add the cream and finish cooking: Pour in the heavy cream and bring the sauce back to a gentle bubble. Return the chicken to the pan. Simmer for about 5 minutes, or until the chicken is cooked through and the sauce thickens to your desired consistency.
