- 2 large chicken breasts
- Salt & pepper to taste
- 1/4 teaspoon garlic powder
- Flour for dredging
- 1 tablespoon olive oil
- 3 tablespoons butter, divided
Sauce
- 1/3 cup chicken broth
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 cup heavy/whipping cream
Instructions
- Prepare the chicken: Slice each large chicken breast in half lengthwise to create 4 smaller cutlets. Season them evenly with garlic powder, salt, and pepper. Lightly coat each piece in flour, shaking off any excess.
- Cook the chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When hot, add the chicken pieces. Cook for about 4-5 minutes on each side or until golden brown. If the oil splatters excessively, lower the heat slightly. Once cooked, remove chicken from the skillet and set aside.
- Make the sauce base: Remove the skillet from heat and add the remaining 2 tablespoons of butter, chicken broth, Dijon mustard, and honey. Stir to combine all ingredients well.
- Simmer the sauce: Return the skillet to medium heat. Stir the sauce continuously until the mustard fully dissolves and the sauce starts to reduce without drying up completely.
- Add the cream and finish cooking: Pour in the heavy cream and bring the sauce back to a gentle bubble. Return the chicken to the pan. Simmer for about 5 minutes, or until the chicken is cooked through and the sauce thickens to your desired consistency.
