Description
A creamy, healthy pasta salad dressing made with Greek yogurt, olive oil, vinegar, and herbs—perfectly tangy and light, yet rich enough to coat every bite of your favorite pasta salad.
Ingredients
1/2 cup plain Greek yogurt
2 tablespoons olive oil
1 tablespoon apple cider vinegar or lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup (optional)
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and black pepper to taste
2–3 tablespoons water (to thin, as needed)
Instructions
- In a small bowl or jar, whisk together Greek yogurt, olive oil, vinegar or lemon juice, Dijon mustard, and honey or maple syrup if using.
- Add minced garlic, oregano, salt, and pepper.
- Stir or shake well until smooth and creamy.
- Add water a tablespoon at a time until desired consistency is reached.
- Taste and adjust seasoning as needed.
- Use immediately or store in the fridge for up to 4 days.
Notes
Use dairy-free yogurt for a vegan version.
Add fresh herbs like dill, parsley, or chives for extra flavor.
Mix in a little tahini or avocado for added creaminess.
Ideal for pasta salad, grain bowls, or veggie wraps.
