Description

A creamy, healthy pasta salad dressing made with Greek yogurt, olive oil, vinegar, and herbs—perfectly tangy and light, yet rich enough to coat every bite of your favorite pasta salad.


Ingredients

1/2 cup plain Greek yogurt

2 tablespoons olive oil

1 tablespoon apple cider vinegar or lemon juice

1 teaspoon Dijon mustard

1 teaspoon honey or maple syrup (optional)

1 clove garlic, minced

1/2 teaspoon dried oregano

Salt and black pepper to taste

23 tablespoons water (to thin, as needed)


Instructions

  1. In a small bowl or jar, whisk together Greek yogurt, olive oil, vinegar or lemon juice, Dijon mustard, and honey or maple syrup if using.
  2. Add minced garlic, oregano, salt, and pepper.
  3. Stir or shake well until smooth and creamy.
  4. Add water a tablespoon at a time until desired consistency is reached.
  5. Taste and adjust seasoning as needed.
  6. Use immediately or store in the fridge for up to 4 days.

Notes

Use dairy-free yogurt for a vegan version.

Add fresh herbs like dill, parsley, or chives for extra flavor.

Mix in a little tahini or avocado for added creaminess.

Ideal for pasta salad, grain bowls, or veggie wraps.

Let sit for 10 minutes before serving to allow flavors to meld.
