Description

This Creamy Cheeseburger Soup is hearty, rich, and loaded with flavor. Featuring seasoned ground beef, tender potatoes, and vegetables in a velvety cheese base, it’s the ultimate comfort food perfect for family dinners or cozy nights in.


Ingredients

  • 2 medium potatoes
  • 1 lb lean ground beef
  • 4 tbsp salted butter
  • 3/4 cup onion, diced
  • 3/4 cup baby carrots, chopped
  • 3/4 cup celery, diced
  • 2 tsp minced garlic
  • 1/3 cup all-purpose flour
  • 3 cups milk
  • 3 cups chicken stock or broth
  • 1 tsp salt
  • 1/2 tsp garlic salt
  • 1/2 tsp black pepper
  • 16 oz Velveeta cheese, cubed
  • 1 cup sour cream
  • Optional Toppings: diced dill pickles, shredded cheese

Instructions

  1. Scrub and pierce potatoes with a fork. Microwave for 12–15 minutes until tender. Halve and let cool. Once cool, peel skins and cut into chunks.
  2. In a large pot, brown ground beef over medium heat until no longer pink. Remove to a paper towel-lined plate and drain excess fat.
  3. In the same pot, melt butter. Sauté onion, carrots, and celery until softened, about 5 minutes. Stir in garlic and cook for 30 seconds.
  4. Whisk in flour and cook for 1 minute to thicken. Gradually whisk in chicken broth and milk. Season with salt, garlic salt, and black pepper. Bring to a simmer.
  5. Add potatoes and cooked ground beef back into the pot. Stir in Velveeta cheese until fully melted and creamy.
  6. Remove from heat and stir in sour cream until combined.
  7. Serve hot with optional toppings like diced pickles or shredded cheese.

Notes

  • Microwaving potatoes speeds up prep, but you can also boil or bake them.
  • Velveeta melts smoothly, but shredded cheddar or Colby Jack can be substituted.
  • For a lighter version, use ground turkey and reduced-fat cheese.
  • Soup thickens as it cools—add extra broth if reheating.
