Ingredients
- 2 medium potatoes
- 1 lb lean ground beef
- 4 tbsp salted butter
- 3/4 cup onion, diced
- 3/4 cup baby carrots, chopped
- 3/4 cup celery, diced
- 2 tsp minced garlic
- 1/3 cup all-purpose flour
- 3 cups milk
- 3 cups chicken stock or broth
- 1 tsp salt
- 1/2 tsp garlic salt
- 1/2 tsp black pepper
- 16 oz Velveeta cheese, cubed
- 1 cup sour cream
- Optional Toppings: diced dill pickles, shredded cheese
Instructions
- Scrub and pierce potatoes with a fork. Microwave for 12–15 minutes until tender. Halve and let cool. Once cool, peel skins and cut into chunks.
- In a large pot, brown ground beef over medium heat until no longer pink. Remove to a paper towel-lined plate and drain excess fat.
- In the same pot, melt butter. Sauté onion, carrots, and celery until softened, about 5 minutes. Stir in garlic and cook for 30 seconds.
- Whisk in flour and cook for 1 minute to thicken. Gradually whisk in chicken broth and milk. Season with salt, garlic salt, and black pepper. Bring to a simmer.
- Add potatoes and cooked ground beef back into the pot. Stir in Velveeta cheese until fully melted and creamy.
- Remove from heat and stir in sour cream until combined.
- Serve hot with optional toppings like diced pickles or shredded cheese.
Notes
- Microwaving potatoes speeds up prep, but you can also boil or bake them.
- Velveeta melts smoothly, but shredded cheddar or Colby Jack can be substituted.
- For a lighter version, use ground turkey and reduced-fat cheese.
- Soup thickens as it cools—add extra broth if reheating.
