Description

This creamy and hearty Corn & Zucchini Chowder is packed with fresh veggies and spices, making it the perfect comforting meal for a chilly day. It’s simple, wholesome, and incredibly satisfying!


Ingredients

  • For the Chowder:
  • 2 tablespoons grass-fed butter, ghee, unrefined organic coconut oil, tallow, or avocado oil
  • 1 large sweet onion, diced
  • 4 carrots, peeled and diced
  • 4 celery ribs, diced
  • 2 large russet potatoes (or white sweet potatoes), peeled and diced
  • 4 cloves fresh garlic, minced
  • 4 ears fresh corn kernels, cut from the cob (or 2 cups frozen organic corn)
  • 4 medium or 2 large zucchini and/or summer squash, chopped
  • 4 cups vegetable broth (or chicken bone broth)
  • 2 cups unsweetened milk of choice
  • 2 teaspoons turmeric
  • 1 teaspoon smoked paprika
  • Sea salt and black pepper, to taste
  • For Garnish:
  • Fresh thyme or Italian parsley to garnish

Instructions

  1. Sauté Vegetables: Heat the butter (or oil) in a large stockpot over medium-high heat. Add the onion, carrots, celery, potatoes, and garlic, sautéing for about 5-7 minutes or until softened, stirring frequently.
  2. Add Corn & Zucchini: Stir in the corn and zucchini (or summer squash). Mix well.
  3. Simmer: Add the broth, milk, turmeric, smoked paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer, covered, for 20 minutes.
  4. Blend Part of the Soup: After 20 minutes, ladle about half of the chowder into a blender and blend until smooth. Return it to the pot and stir to combine. Let it simmer for an additional 3-5 minutes.
  5. Garnish & Serve: Garnish with fresh thyme or Italian parsley and serve hot!
