- 10 Medjool dates
- 1 cup unsweetened shredded coconut
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- ¼ cup unsweetened cocoa powder
- 2 tbsp honey

- 2 oz Lily’s dark chocolate baking chips (optional)
Instructions
- Process the ingredients. Combine the Medjool dates, shredded coconut, coconut oil, vanilla extract, cocoa powder, and honey in a food processor.
- Form the dough. Mix the ingredients until a crumbly dough starts to form, ensuring everything is evenly combined and sticky enough to hold together.
- Shape the bars. Drop the date mixture onto a sheet of wax paper and press it into a block shape, keeping it about ½ inch thick for optimal texture.
- Add the chocolate topping (optional). Melt the Lily’s dark chocolate baking chips separately and spread the melted chocolate over the top of the pressed date mixture if you desire a richer chocolate flavor.
- Chill to set. Refrigerate the formed bars for about 30 minutes or until firm and set.
- Cut and serve. Once chilled, cut the block into bars of your preferred size and enjoy your healthy chocolate coconut date bars.
Notes
- Using Medjool dates is recommended due to their natural softness and sweetness, but any variety of dates can work.
- For a chunkier texture, stir in chopped nuts or extra chocolate chips before shaping the bars, either mixed into the food processor or folded in afterward.
