Description

Delicious and moist Chocolate Avocado Muffins that combine rich cocoa flavor with healthy avocado for a fudgy texture. These muffins are a perfect treat for breakfast or dessert, offering a chocolatey indulgence with a twist of nutrition.

Ingredients

Dry Ingredients

  • 1/2 cup + 2 tablespoons all purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt

Wet Ingredients

  • 1 large egg
  • 1/2 cup mashed avocado (about 1 medium)
  • 1/4 cup sugar
  • 1/4 cup packed light brown sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla paste

Add-ins

  • 1/4 cup semi-sweet chocolate chips (plus more for topping)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line a muffin pan with 5 paper liners to prevent sticking and make cleanup easy.
  2. Combine Dry Ingredients: In a small bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt to ensure even distribution of leavening agents and chocolate flavor.
  3. Mix Wet Ingredients: In a larger bowl, whisk the egg, mashed avocado, sugar, brown sugar, milk, and vanilla paste until smooth and the sugar is fully dissolved, creating a creamy base for the muffins.
  4. Add Dry Ingredients and Chocolate Chips: Add the dry flour mixture and the chocolate chips to the wet mixture. Stir gently with a spoon until just combined, being careful not to overmix to keep the muffins tender.
  5. Fill Muffin Pan: Divide the batter evenly among the prepared muffin liners. Sprinkle additional chocolate chips on top of each muffin for extra chocolatey goodness.
  6. Bake Muffins: Bake in the preheated oven for 24 to 26 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Avoid overbaking to keep the muffins moist and fudgy.
  7. Cool Muffins: Remove the muffin pan from the oven and place it on a wire rack to cool before serving, allowing the muffins to set perfectly.

Notes

  • Ensure not to overbake to maintain moist, fudgy texture.
  • Use ripe avocado for best flavor and creaminess.
  • Adding extra chocolate chips on top enhances the chocolate experience.
  • Muffins can be stored in an airtight container for up to 3 days at room temperature or refrigerated for up to a week.
  • For a dairy-free version, substitute milk with almond or oat milk.
