Description

Chicken Cranberry Pinwheels are savory and sweet tortilla roll-ups filled with creamy chicken, cranberries, and greens. Easy to make and perfect for parties, lunches, or quick snacks.


Ingredients

4 large flour tortillas or wraps

2 cups cooked chicken, shredded or chopped

3/4 cup cream cheese, softened

1/4 cup mayonnaise or plain yogurt (optional)

1/2 cup dried cranberries, chopped

1 cup baby spinach or arugula

1/4 cup chopped pecans or walnuts (optional)

1 teaspoon Dijon mustard (optional)

Salt and freshly ground black pepper, to taste


Instructions

  1. In a bowl, combine cream cheese, mayonnaise or yogurt, and Dijon mustard until smooth. Stir in chicken, cranberries, nuts (if using), salt, and pepper.
  2. Spread about 1/4 of the filling evenly onto each tortilla, leaving a border.
  3. Layer spinach or arugula over the filling.
  4. Roll each tortilla tightly and wrap in plastic. Chill for at least 15 minutes to firm up.
  5. Unwrap and slice into 1-inch pinwheels. Serve chilled or at room temperature.

Notes

Use rotisserie chicken for convenience.

Chill well before slicing for best results.

Substitute goat cheese or feta for flavor variation.

Serve with dipping sauces like ranch or honey mustard.
