Description

These Chicken Caesar Smashed Tacos are a quick and flavorful meal combining seasoned ground chicken cooked directly on tortillas, topped with fresh romaine lettuce, feta cheese, and a tangy Caesar-style yogurt dressing. Perfect for a satisfying lunch or dinner in just 30 minutes, these tacos offer a delicious twist on traditional Caesar salad flavors with a fun smashed chicken filling.


Ingredients

For the Chicken Smashed Filling

  • 1 pound ground chicken or ground turkey
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 Tablespoon avocado oil (for oiling pan)
  • 8 medium 50/50 mix tortillas (corn/whole wheat)

For the Toppings and Dressing

  • 2 cups finely chopped romaine lettuce
  • 1/3 cup feta cheese
  • 1/2 Tablespoon lemon juice
  • 1 Tablespoon olive oil
  • 1 Tablespoon Worcestershire sauce
  • 2 teaspoons minced garlic
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Instructions

  1. Mix Chicken & Seasoning: In a large mixing bowl, combine the ground chicken with 2 teaspoons minced garlic, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix thoroughly until evenly combined.
  2. Smash On Tortillas: Scoop about 1/4 cup of the chicken mixture onto a tortilla. Using a fork, smash and spread the mixture evenly across the entire surface of the tortilla.
  3. Heat Oil: Warm 1/2 tablespoon avocado oil in a pan over medium-high heat until shimmering.
  4. Cook Chicken Tortilla: Place the tortilla on the pan chicken-side down. Cook for 4-5 minutes to allow the chicken to cook through and develop a slight crisp texture.
  5. Flip & Cook: Carefully flip the tortilla and cook for an additional 1-2 minutes on the other side to finish cooking the chicken and warm the tortilla.
  6. Repeat: Continue the process with the remaining tortillas, cooking 2-3 at a time if your pan size allows.
  7. Shake Dressing: While cooking the tacos, whisk or shake together the dressing ingredients: 1/2 tablespoon lemon juice, 1 tablespoon olive oil, 1 tablespoon Worcestershire sauce, 2 teaspoons minced garlic, 1/2 cup plain Greek yogurt, 2 teaspoons Dijon mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper until smooth and well combined.
  8. Top & Drizzle: Once the chicken smashed tortillas are cooked, top each with 2 cups finely chopped romaine lettuce and a drizzle of the prepared dressing. Finish by sprinkling 1/3 cup feta cheese over the top. Serve immediately and enjoy!
