Ingredients
For the Chicken Smashed Filling
- 1 pound ground chicken or ground turkey
- 2 teaspoons minced garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 Tablespoon avocado oil (for oiling pan)
- 8 medium 50/50 mix tortillas (corn/whole wheat)
For the Toppings and Dressing
- 2 cups finely chopped romaine lettuce
- 1/3 cup feta cheese
- 1/2 Tablespoon lemon juice
- 1 Tablespoon olive oil
- 1 Tablespoon Worcestershire sauce
- 2 teaspoons minced garlic
- 1/2 cup plain Greek yogurt
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Mix Chicken & Seasoning: In a large mixing bowl, combine the ground chicken with 2 teaspoons minced garlic, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix thoroughly until evenly combined.
- Smash On Tortillas: Scoop about 1/4 cup of the chicken mixture onto a tortilla. Using a fork, smash and spread the mixture evenly across the entire surface of the tortilla.
- Heat Oil: Warm 1/2 tablespoon avocado oil in a pan over medium-high heat until shimmering.
- Cook Chicken Tortilla: Place the tortilla on the pan chicken-side down. Cook for 4-5 minutes to allow the chicken to cook through and develop a slight crisp texture.
- Flip & Cook: Carefully flip the tortilla and cook for an additional 1-2 minutes on the other side to finish cooking the chicken and warm the tortilla.
- Repeat: Continue the process with the remaining tortillas, cooking 2-3 at a time if your pan size allows.
- Shake Dressing: While cooking the tacos, whisk or shake together the dressing ingredients: 1/2 tablespoon lemon juice, 1 tablespoon olive oil, 1 tablespoon Worcestershire sauce, 2 teaspoons minced garlic, 1/2 cup plain Greek yogurt, 2 teaspoons Dijon mustard, 1/2 teaspoon salt, and 1/4 teaspoon pepper until smooth and well combined.
- Top & Drizzle: Once the chicken smashed tortillas are cooked, top each with 2 cups finely chopped romaine lettuce and a drizzle of the prepared dressing. Finish by sprinkling 1/3 cup feta cheese over the top. Serve immediately and enjoy!
Notes
- Use a fork to evenly smash the chicken mixture onto the tortilla to ensure even cooking.
- Cooking 2-3 tortillas at a time can save time if your pan is large enough.
- The dressing can be prepared in advance and stored in the refrigerator for up to 2 days.
- For a lower-fat option, substitute ground turkey or lean chicken breast for the ground chicken.
- The 50/50 mix tortillas combine the flavor of corn with the softness of whole wheat, but you can use either corn or flour tortillas based on your preference.
